Instant Pot Vegetable Biryani

 

Ingredients

Basmati Rice – 3 cups soaked in water for 30 mins (http://amzn.to/2DyDzKH)
Onion-1/2, Medium sized, sliced
Green chili (AKA Birds Eye Chili) – 5, slit (Reduce this quantity if you want biryani to be less spicy)
1 bunch of Mint leaves
Salt- As per taste
Curd/Yogurt- 4 tablespoons (unflavored Dannon yogurt works fine)
Oil – 4 tablespoons

Garam Masala powder-1 tablespoon
Cumin powder – 1 tablespoon
Coriander Powder-1 tablespoon
Ginger garlic paste – 1 tablespoon
Red chilli powder – 1 tablespoon

Vegetables: (You can substitute with vegetables of your choice)

Beans-1/2 cup
Potato – 1/2 cup
Carrot – 1
Cauliflower – 1 cup

Whole Garam Masala
*********************
Cloves-5
Bayleaf-3
Caraway seeds- 1 teaspoon
Cinnamon sticks-2
Cardamom-6

Directions:

1 Turn on IP and switch to Sauté mode.
2 Add oil and once oil is hot, add garam masala spices. Saute well.
3 Next throw in the mint leaves and mix well.
4 Add the onions to the base, and sauté till they start to caramelize
5 Next add ginger garlic paste and mix and saute well
6 Next add the vegetables; add cauliflower first and let it cook.Then add carrots, potatoes and beans. Saute them well
7 Next add the masalas; red chili powder, garam masala powder, cumin powder, cumin powder and salt.
8 Next add the yogurt into the base mix and mix well.
9 Next add the 3 cup of rice and add 4 cups of water
10 Switch to Manual mode, adjust the time to 6 mins, and make sure the whistle is in “Sealing” mode.
11 Do a QR and make sure the safety valve has dropped, before opening the lid.

Serve hot, along side “raita” and “mirchi ka salan”.

*****************************

Vegetable Biryani is an ironic dish. Biryani, right from its inception was meant to be served with meat(of either chicken or goat).
Yet, the vast majority of Indians are vegetarians. Even among those who eat meat, quite a few tend to consider meat to be ‘once-in-a-week’ kind of dish.
So perhaps vegetable biryani was born from the natural human need to include all cultures and religions.

1. Rice is widely cultivated in India.
2. India is also rich in spices and vegetables grow in abundance.
3. India has a long history of incorporating the customs and practices of various rulers throughout the ages.

So perhaps one can say that Vegetable Biryani is a true reflection of India in culinary form.
