Instant Pot Pav Bhaji

 

A little about Pav Bhaji:

Pav(Bread) Bhaji(Veggies) is quintessential Indian street food; its a thick ,savory, buttery vegetable mash served with airy yeast rolls knows as Pav. ‘Pav’ comes from the Portugese word for bread and ‘Bhaji’ is the Marati word for vegetable curry.

In todays India, Pav Bhaji is generally eaten in the evenings as a snack, but its nutritious enough to eaten at any time of the day as a meal. Pav Bhaji was invented in the 1850s, as a midnight dish by street food vendors, made with all the leftover vegetables from the day, mashed up together, with loads of added spice, and butter. The recipe in this video is Americanized for a more international appeal. **********************************************************************

Ingredients:

Butter 4 tbps (Half a stick of butter)

Pav bhaji masala, 3 tbsp (http://amzn.to/2zhiLEO)

Turmeric powder, half tbsp

Ginger garlic paste, 1 tbsp (http://amzn.to/2BPPeFc)

Salt, as per taste

4 green chilies, diced (reduce/skip this if you don’t want it to be spicy)

Lime juice ,1 lime,

Cumin seeds, 1 tbsp

Coriander/Cilantro leaves, one bunch, chopped, for garnish

Oil, 3 tbsp

Onion, 1 medium sized, diced into small pieces

Tomatoes, 2 medium sized, diced into small pieces

Cauliflower, 1 cup, diced into small pieces

Red bell pepper, half a pepper, diced into small pieces

Green bell pepper, half a pepper, diced into small pieces

Carrot, 1 big, diced into small pieces

Green peas, half a cup

Potatoes, 2 medium sized, diced into small pieces

Bread (I used store bought Dinner rolls. Anything works, as the veggies go well with all kinds of bread)

Directions:

For the Bhaji:

1. Turn on Saute Mode and pre heat the liner.

2. Add Oil and once the oil is hot, add cumin seeds and green chillies.Saute for a minute.

3. Next add onions and saute for a couple of minutes.

4. Add turmeric powder and ginger garlic paste and saute them for a few minutes.

5. Add tomatoes and saute till the tomatoes are mushy.Takes around 5 minutes

6. Once the tomatoes turn mushy, add the vegetables, starting with cauliflower.

7. Then add bell peppers, carrots, green peas and potatoes.

8. Add Pav Bhaji masala and salt and stir well

9. Pressure cook for 6 minutes, with whistle in sealing mode.

10. NPR for 10 minutes and QR the rest of the pressure

11. Turn on Saute mode and let it simmer till it comes to desired consistency

12. Once its reaches the desired consistency, add butter, lime juice and cilantro leaves.

For the Pav (Bread)

1.In a griddle/pan, heat some butter

2. Fry both sides of the bread

Serve hot! Serves 4 adults.

Skip all the butter steps to make it Vegan. **********************************************************************
